Family Note

Good for weeknights because the sauce does most of the work. Serve with rice and cucumber.

Ingredients

  • 3 pounds chicken thighs
  • 1 cup shoyu
  • 1 cup water
  • 1/2 cup brown sugar
  • 4 cloves garlic, crushed
  • 1 thumb ginger, sliced
  • 2 green onions, chopped

Directions

  1. Place shoyu, water, brown sugar, garlic, and ginger in a large pot.
  2. Add chicken and bring to a gentle simmer.
  3. Cover and cook for about 35 minutes, turning chicken halfway through.
  4. Uncover and simmer 10 more minutes so the sauce lightly thickens.
  5. Top with green onions and serve with hot rice.
