Make this early so it has enough time to chill before cutting.

Ingredients

  • 1 can coconut milk
  • 1 cup water
  • 1/2 cup sugar
  • 1/2 cup cornstarch
  • Pinch of salt

Directions

  1. Whisk coconut milk, water, sugar, cornstarch, and salt in a saucepan.
  2. Cook over medium heat, stirring constantly.
  3. When the mixture thickens and looks glossy, cook 1 more minute.
  4. Pour into a square pan and smooth the top.
  5. Chill at least 2 hours, then cut into squares.
